Spinach & cheese mini frittatas

Ingredients

4 eggs 1/4 cup milk (organic milk, nut milk, or coconut milk will all work) Salt and pepper to season 2 handfuls of fresh spinach, finely chopped 1/2 cup grated cheese

Top tip: spinach is a great vegetable to add to recipes for kids as it has a mild taste, which means you can easily hide it!

Method

1. In a bowl, whisk the eggs, your choice of milk, and salt and pepper.

2. Add the spinach and grated cheese to the egg mixture and stir well.

3. Pour into a lined muffin tin or silicone muffin cases. 4. Place in the oven and cook at 180 ̊C until the egg is firm. This should take about 15 minutes.

5. Serve warm or cooled.

Top tip: spinach is packed full of so many micronutrients that are important for kids. It contains Vitamin K and Vitamin C both which play in important role in immune health and will help to build up tolerance to many sicknesses and parasites. Spinach also contains calcium, which is important for growing bones.
