Healthy Persimmon and Apple Mini Crumbles

Autumn is such a great time for fruit, and these healthy little crumbles are naturally sweet and full of goodness.

(Makes 6 small ramekins)

Pre-heat oven to 180 fan bake.

Mix FILLING together in a bowl and divide between oven-proof ramekins. Feel free to leave the skin on fruit as it’s full of extra nutrients.

  • 2-3 Large Matakana Persimmons diced
  • 2 Apples diced
  • Juice from 1 lemon
  • 3 Tbs runny honey (if using a thicker honey, gently warm)

Crumble TOPPING ingredients in a bowl with your fingers and pat firmly on top of filling. Note you may want to double if using a wider neck ramekin.

  • 1 cup flour
  • 1/2 cup oats
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 2 Tbs coconut sugar (or raw)
  • 120g butter (or swap for 1/2 cup coconut oil)

Cook for 25-30 minutes until golden on top.
