Flourless and sugar free what more could you want from a chocolate cake recipe, plus, its absolutely delicious.
Ingredients
- 200g dates
- 150g shredded coconut
- 200ml coconut milk
- 4 eggs
- 3 courgettes
- 50g ground almonds
- 3 tbsp cocoa powder
- ½ tsp baking soda
- Zest of an orange
- 2 bananas
- 1tbsp maple syrup, optional
- 1–2 tsp cinnamon
- Vanilla extract, optional
- 100g dark chocolate chips
- 200g butter
For the topping
- 50g dark chocolate
- Roughly chopped almonds
- 2 tbsp coconut oil, melted
Method:
Preheat oven to 150oC. Grate courgettes. Blend the bananas and coconut.
Soak dates in boiling water for 5 minutes, or until soft, and blend. Melt butter and separate egg yolks. Combine all of the above together and mix.
Beat egg whites and gently fold into the dough. Place coconut in a baking tray before pouring in the mixture to ensure the cake does not stick. Bake for 1 hour.
Melt chocolate and oil together and cover the cake with it. Sprinkle with roughly chopped almonds.
