Brown rice and cheese balls

Facts: brown rice is high in B vitamins, magnesium, and fibre, and is low in glycemic index, meaning it will help to stabilise blood sugar levels and keep your kids feeling full and satisfied. 

Brown rice and cheese balls

Ingredients

1 cup brown rice, cooked 1/2 cup grated cheese

Method

1. Line a small tray or plate with baking paper. Heat the cooked rice in the microwave for 30 seconds. Add the grated cheese on top, then heat for another 30 seconds.

2. Alternatively, as soon as the rice has cooked and is still hot, mix through grated cheese for a few minutes until the cheese has melted.

3. Take a tablespoon-sized amount of rice and roll it into a ball, then place on the baking paper. Repeat until you have used up all of the mixture. Leave in the fridge to set for 30 minutes.
