What's for Lunch?

 

Back to School means back to school lunches and we all can usually do with a little inspiration in this area. Try using 4 simple ingredients as a way of livening up your kids’ sandwiches this year with these healthy yet easy recipes.

Lunch box sushi

serves 2

  • 4 slices soy and linseed bread
  • 1 tablespoon whole egg mayonnaise
  • 1⁄2 avocado, mashed
  • 1⁄2 cucumber, thinly sliced

Remove the crusts from the slices of bread. Along the middle of each slice spread a little mayonnaise and avocado. Place long, thin strips of cucumber on top and roll tightly. Cut in thirds, turn up and place tightly into the lunchbox, with seams touching each other so as not to fall apart.

Use a variety of fillings: asparagus, boiled eggs, carrot, cucumber, enoki mushrooms, radish and add a dash of lemon juice to keep fresh and green.

chicken calypso sambo

serves 2

  • 1⁄2 cup shredded cooked chicken
  • 4 dried apricots, finely diced
  • 2 tablespoons mayonnaise
  • 2 slices multigrain bread

In a bowl, mix together the chicken, apricots, and mayonnaise. Use as a sandwich filling for the two slices of bread. Slice the sandwich before serving or wrap tightly and pop it into a lunchbox.

Add a lettuce leaf for colour and crunch!
